A festive, protein-rich loaf cake made from Christmas leftovers.

Ingredients
- 2 large leftover apples
- Orange juice (enough to coat apples)
- 2 cups all-purpose flour
- 1 cup LØUCO Protein Powder
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup sugar
- 1 cup Citizens of Soil extra virgin olive oil
- 2 large eggs
- ⅔ cup leftover Christmas pudding
Method
- Preheat the oven to 180°C (350°F). Chop the apples and coat them lightly in orange juice to prevent browning.
- Mix dry ingredients: In a large bowl, sift together the flour, LØUCO Protein Powder, cinnamon, nutmeg, baking powder, and baking soda.
- Whisk wet ingredients: In a separate bowl, whisk together the sugar and olive oil. Mix on low for 2 minutes until smooth.
- Add eggs: While mixing, add eggs one at a time, whisking for another 2 minutes.
- Combine: Make a well in the dry ingredients and pour in the wet mixture. Fold gently with a wooden spoon until just combined.
- Add leftovers: Mix in the chopped apples and Christmas pudding until evenly incorporated. Batter will be thick.
- Prepare the pan: Line a 9-inch loaf tin with greaseproof paper and spoon in the batter. Smooth the top with the back of a spoon.
- Bake: Bake at 180°C for 45 minutes. Let cool slightly before serving warm or storing.
