Ingredients

  • 1 tin of chickpeas (drained & rinsed)
  • 40g LØUCO Protein Powder
  • 3 cooked beetroots
  • 3 garlic cloves
  • Zest & juice of 1 lemon
  • 4 tbsp tahini
  • 3 tbsp olive oil
  • ¼ tsp salt
  • ½ tsp ground cumin

To serve:

  • Chilli oil
  • Pumpkin seeds
  • Fresh parsley

 

Method

  1. If using raw beetroot, boil in a covered pan for 30–40 minutes until tender. Cool and peel.
  2. In a blender, combine beetroot, chickpeas, garlic, lemon zest & juice, tahini, olive oil, LØUCO Protein Powder, cumin, salt, and a few cracks of pepper.
  3. Blend until smooth, adding a little water or extra oil if needed to adjust the texture.
  4. Serve with a drizzle of chilli oil, a sprinkle of pumpkin seeds, and fresh parsley.
