Ingredients
- 1 tin of chickpeas (drained & rinsed)
- 40g LØUCO Protein Powder
- 3 cooked beetroots
- 3 garlic cloves
- Zest & juice of 1 lemon
- 4 tbsp tahini
- 3 tbsp olive oil
- ¼ tsp salt
- ½ tsp ground cumin
To serve:
- Chilli oil
- Pumpkin seeds
- Fresh parsley
Method
- If using raw beetroot, boil in a covered pan for 30–40 minutes until tender. Cool and peel.
- In a blender, combine beetroot, chickpeas, garlic, lemon zest & juice, tahini, olive oil, LØUCO Protein Powder, cumin, salt, and a few cracks of pepper.
- Blend until smooth, adding a little water or extra oil if needed to adjust the texture.
- Serve with a drizzle of chilli oil, a sprinkle of pumpkin seeds, and fresh parsley.
