Guilt-Free Christmas Protein Shortbread Cookies

Made with LØUCO Protein Powder, they’re light, nourishing, and deliciously satisfying.

Ingredients
- 1 cup plain flour
- ¼ cup (30g) LØUCO Protein Powder (Nourish or Perform)
- 2 tbsp sugar or sweetener of choice
- Drizzle of honey
- 3 tbsp light butter or vegan butter
- 1 tbsp oil
- Sprinkle of ground cinnamon
- Splash of oat milk (if needed)
Method
- Preheat your oven to 160°C (fan).
- In a bowl, combine the flour, protein powder, sweetener, and cinnamon.
- Add butter and blend with a fork or your hands until the texture is crumbly.
- Add the oil, honey, and a splash of oat milk if the mixture feels dry.
- Bring the dough together until smooth.
- Roll out the dough and cut into festive shapes using cookie cutters.
- Place on a lined baking tray and bake for 10 minutes until lightly golden.
- Let cool, then decorate however you wish (an opportunity to get creative)!
