High-Protein Pumpkin Seed Loaf Cake

This High-Protein Pumpkin Seed Loaf Cake is soft, lightly spiced, and packed with fibre, healthy fats, and 20g+ protein per slice, thanks to LØUCO Nourish and gut-friendly kefir.

Ingredients

  • 1 cup LØUCO Nourish Protein Powder
  • ¾ cup wholewheat flour
  • ¾ cup plain kefir
  • ¼ cup unsweetened almond milk
  • 2 tbsp almond butter
  • 2 large eggs
  • 1 tbsp maple syrup (optional)
  • 1½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp sea salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbsp whole pumpkin seeds (for topping)

 

Method

  1. Preheat oven to 175°C and line an 8x4-inch loaf tin with parchment paper. Lightly grease the sides.
  2. In a large bowl, whisk together LØUCO Protein Powder, wholewheat flour, baking powder, bicarb, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk eggs, kefir, almond milk, almond butter, and maple syrup (if using) until smooth.
  4. Add wet mixture to the dry ingredients and stir gently until just combined.
  5. Spoon the batter into your prepared tin and smooth the top.
  6. Sprinkle with pumpkin seeds and press them in slightly.
  7. Bake for 40–45 minutes or until a knife inserted comes out clean.
  8. Cool in the tin for 10 minutes, then lift out onto a rack to cool completely before slicing.
