This High-Protein Pumpkin Seed Loaf Cake is soft, lightly spiced, and packed with fibre, healthy fats, and 20g+ protein per slice, thanks to LØUCO Nourish and gut-friendly kefir.

Ingredients
- 1 cup LØUCO Nourish Protein Powder
- ¾ cup wholewheat flour
- ¾ cup plain kefir
- ¼ cup unsweetened almond milk
- 2 tbsp almond butter
- 2 large eggs
- 1 tbsp maple syrup (optional)
- 1½ tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp sea salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 2 tbsp whole pumpkin seeds (for topping)
Method
- Preheat oven to 175°C and line an 8x4-inch loaf tin with parchment paper. Lightly grease the sides.
- In a large bowl, whisk together LØUCO Protein Powder, wholewheat flour, baking powder, bicarb, salt, cinnamon, and nutmeg.
- In a separate bowl, whisk eggs, kefir, almond milk, almond butter, and maple syrup (if using) until smooth.
- Add wet mixture to the dry ingredients and stir gently until just combined.
- Spoon the batter into your prepared tin and smooth the top.
- Sprinkle with pumpkin seeds and press them in slightly.
- Bake for 40–45 minutes or until a knife inserted comes out clean.
- Cool in the tin for 10 minutes, then lift out onto a rack to cool completely before slicing.
