Why settle for less when you can have more? Unlike most store-bought protein bars with under 2g of fibre, this Lemon & Poppy Seed Loaf delivers over 40g, making it a deliciously nourishing, guilt-free meal prep option.
Made with LØUCO Protein Powder (which has 4.8g fibre per serving scoop!) and wholesome ingredients like coconut flour and olive oil, it’s the perfect bake to support digestion, keep you full, and fuel your week.
Ingredients
- 40g LØUCO Protein Powder
- 40g coconut flour
- 110g olive oil
- 4 large eggs
- Organic agave nectar (to taste)
- 60ml lemon juice
- 3 tsp poppy seeds
- Zest of 1 lemon
- 1 tsp baking powder
Method
- Preheat oven to 180°C (350°F).
- In a bowl, whisk together wet ingredients: olive oil, eggs, agave nectar, and lemon juice.
- In another bowl, combine dry ingredients: coconut flour, LØUCO Protein Powder, and baking powder.
- Mix wet and dry ingredients together until smooth.
- Fold in poppy seeds and lemon zest.
- Pour mixture into a loaf tin lined with greaseproof paper.
- Bake for 20–25 minutes or until golden and cooked through.
- Serve with a dollop of Greek yoghurt and a drizzle of olive oil.

This loaf keeps beautifully in the fridge for up to 4 days. Add crushed pistachios or a spoon of coconut yoghurt on top for extra indulgence.
