Ingredients
- 1 sheet puff pastry (320g)
- 2 large red apples, finely sliced
- 3 tbsp brown sugar
- 4 tbsp LØUCO Protein Powder
- 1 tbsp Greek yoghurt
- 1 tbsp cinnamon
Method
- Preheat the oven to 180°C and line a baking tray with baking paper.
- Finely slice the apples, then toss with the brown sugar and cinnamon until evenly coated.
- Cut the puff pastry sheet into 8 equal squares.
- In a small bowl, mix the LØUCO Protein Powder with the Greek yoghurt to create a thick protein filling.
- Add a spoonful of the protein mixture to the centre of each pastry square, followed by the cinnamon apples.
- Fold or shape the pastry around the filling as desired, leaving some of the apple visible, and transfer to the lined baking tray.
- Bake for 20–25 minutes, or until the pastry is puffed and golden.
- Allow to cool slightly before serving.
LØUCO Tip
These are best served slightly warm. If you have leftovers, gently reheat them in the oven or air fryer to bring the pastry back to its crispest.
Why It Works
- Apples + cinnamon – a naturally sweet, warming combination that brings plenty of flavour to the filling.
- LØUCO Protein – adds plant-based protein to a classic pastry-style bake.
- Greek yoghurt – helps bind the LØUCO into a creamy filling while contributing additional protein.
- Individual portions – easy to bake, serve and store, whether you're making them for brunch or prepping a sweet snack for the week.
