Protein Cinnamon Buns
Soft, cinnamon-filled protein buns made for one, or two if you’re sharing.
When you want something warm and sweet without making an entire batch, these Protein Cinnamon Buns are the answer. Made with Greek yoghurt and LØUCO Protein, they’re simple to prepare and bake in under 30 minutes.
Each bun delivers approximately 16g of protein, with a classic cinnamon-sugar centre and creamy protein yoghurt frosting on top.

Ingredients
For the dough:
- 2½ tbsp whole wheat pastry flour
- 2 tbsp LØUCO Protein Powder
- ¼ tsp baking powder
- Pinch of salt
- 3 tbsp Greek yoghurt
For the cinnamon filling:
- 2 tsp brown sugar
- ½ tsp cinnamon
- ½ tsp softened butter
For the protein frosting:
- ½ tbsp Greek yoghurt
- 1 tsp LØUCO Protein Powder
- 1 tsp almond milk
Method
- Preheat the oven to 175°C and lightly grease a small baking tin or individual oven-safe dish.
- Add the flour, LØUCO Protein, baking powder and salt to a bowl and mix to combine.
- Add the Greek yoghurt and stir until a dough forms.
- Transfer the dough to a lightly floured surface, knead gently for a few seconds and roll into a long rectangle.
- Spread the softened butter over the dough. Mix the brown sugar and cinnamon together, then sprinkle evenly over the top.
- Roll the dough tightly, starting from one of the short ends. Divide into two equal buns and place in your prepared tin.
- Bake for 22–25 minutes, or until lightly golden and puffed.
- Meanwhile, make the frosting by mixing the Greek yoghurt, LØUCO Protein and almond milk until smooth.
- Allow the buns to cool slightly before drizzling over the protein frosting. Enjoy while still warm.
LØUCO Tip
For an easy breakfast the next morning, make them the night before and gently reheat before adding the yoghurt frosting.
