Ingredients
- 100g almonds
- 50g LØUCO Protein Powder (Nourish or Perform)
- 200g Medjool dates (pitted)
- 2 tsp ground cinnamon + nutmeg
- 1 tbsp almond butter
- 2 tbsp pumpkin purée
Method
- Add almonds to a blender and pulse until they resemble couscous.
- Add LØUCO Protein Powder and pitted dates, then blend until starting to bind.
- Add spices, almond butter, and pumpkin purée. Blend again until the mixture forms a thick, dough-like consistency.
- Roll into small balls and place on a lined tray.
- Transfer to the freezer for 40 minutes to set.
- Store in the fridge for up to 1 week.
