These Almond & Coconut Cookie Dough Eggs are the ultimate blend of indulgence and nourishment. Packed with LØUCO Protein Powder, fibre-rich coconut, and topped with dark chocolate and crushed mini eggs, they’re a feel-good sweet treat that satisfies.
Perfect for Easter celebrations, or anytime you're after a protein-packed bite with a playful twist.
Ingredients
- 75g desiccated coconut
- 40g coconut flour
- 40g LØUCO Protein Powder
- Handful of soft dates (pitted)
- 2 tbsp almond butter
- Splash of almond milk
- Squeeze of organic honey
- Pinch of sea salt
- 100g dark chocolate (we love Islands)
- Mini eggs (for decoration)
Method
- In a food processor, combine desiccated coconut, coconut flour, LØUCO Protein Powder, and soft dates. Blend until the texture resembles couscous.
- Add almond butter, almond milk, honey, and a pinch of salt. Mix until you get a dough-like consistency.
- Shape the dough into egg-sized balls and let them chill in the fridge for 15 minutes.
- Dip each egg in melted dark chocolate and place on a lined tray.
- Sprinkle crushed mini eggs on top for decoration.
- Chill for another 15 minutes until set. Enjoy!
