A no-bake, high-protein treat with fibre, chocolate, and seasonal sweetness.

These Almond & Coconut Cookie Dough Eggs are the ultimate blend of indulgence and nourishment. Packed with LØUCO Protein Powder, fibre-rich coconut, and topped with dark chocolate and crushed mini eggs, they’re a feel-good sweet treat that satisfies.

Perfect for Easter celebrations, or anytime you're after a protein-packed bite with a playful twist.

Ingredients

  • 75g desiccated coconut
  • 40g coconut flour
  • 40g LØUCO Protein Powder
  • Handful of soft dates (pitted)
  • 2 tbsp almond butter
  • Splash of almond milk
  • Squeeze of organic honey
  • Pinch of sea salt
  • 100g dark chocolate (we love Islands)
  • Mini eggs (for decoration)

 

Method

  1. In a food processor, combine desiccated coconut, coconut flour, LØUCO Protein Powder, and soft dates. Blend until the texture resembles couscous.
  2. Add almond butter, almond milk, honey, and a pinch of salt. Mix until you get a dough-like consistency.
  3. Shape the dough into egg-sized balls and let them chill in the fridge for 15 minutes.
  4. Dip each egg in melted dark chocolate and place on a lined tray.
  5. Sprinkle crushed mini eggs on top for decoration.
  6. Chill for another 15 minutes until set. Enjoy!

Make a double batch and freeze half for future sweet cravings. You can also skip, or swap out, the mini eggs for a cleaner, year-round snack option.
