Made with LØUCO Perform, Greek yoghurt, banana, and berries, they deliver slow-release energy, gut-friendly ingredients, and a light, fluffy texture you’ll want to batch bake again and again.

Ingredients

  • 120g plain flour
  • 1 scoop LØUCO Perform Protein Powder
  • 1¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Drizzle of honey
  • 1 large egg
  • 1 ripe banana, mashed
  • 160g 0% Greek yoghurt
  • 80ml oat milk or almond milk
  • 120g blueberries (or berries of choice)

Method

  • Preheat your oven to 200°C and line a muffin tray with cases.
  • In one bowl, whisk together flour, LØUCO protein powder, baking powder, baking soda, and salt.
  • In a separate bowl, mash the banana, then mix in the Greek yoghurt, egg, milk, and honey until smooth.
  • Gently fold the wet ingredients into the dry ingredients until just combined – avoid overmixing.
  • Fold in the berries.
  • Spoon the mixture into muffin cases, filling each about ¾ full.
  • Bake at 200°C for 5 minutes, then reduce the oven to 175°C and bake for a further 12–15 minutes, until risen and lightly golden.
  • Cool for 10 minutes before serving.

LØUCO Tip

Serve warm with a dollop of Greek yoghurt on top for extra protein and creaminess, or freeze individual muffins for easy grab-and-go fuel.
