Easy High-Protein Berry Muffins

These High-Protein Berry Muffins are quick to make, naturally sweetened, and packed with clean protein to keep you satisfied long after the last bite. Ideal for post-workout fuel, lunchboxes, or when sweet cravings hit, without the sugar crash.
Made with LØUCO Perform, Greek yoghurt, banana, and berries, they deliver slow-release energy, gut-friendly ingredients, and a light, fluffy texture you’ll want to batch bake again and again.

Ingredients
- 120g plain flour
- 1 scoop LØUCO Perform Protein Powder
- 1¼ tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- Drizzle of honey
- 1 large egg
- 1 ripe banana, mashed
- 160g 0% Greek yoghurt
- 80ml oat milk or almond milk
- 120g blueberries (or berries of choice)
Method
- Preheat your oven to 200°C and line a muffin tray with cases.
- In one bowl, whisk together flour, LØUCO protein powder, baking powder, baking soda, and salt.
- In a separate bowl, mash the banana, then mix in the Greek yoghurt, egg, milk, and honey until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined – avoid overmixing.
- Fold in the berries.
- Spoon the mixture into muffin cases, filling each about ¾ full.
- Bake at 200°C for 5 minutes, then reduce the oven to 175°C and bake for a further 12–15 minutes, until risen and lightly golden.
- Cool for 10 minutes before serving.

Serve warm with a dollop of Greek yoghurt on top for extra protein and creaminess, or freeze individual muffins for easy grab-and-go fuel.
