Ingredients
- 50g roasted hazelnuts
- 100g cashews
- 3 tbsp cacao nibs
- 40g LØUCO Protein Powder
- 8 Medjool dates (pitted)
- 80g hazelnut or almond butter
- 1 tbsp honey (optional, for extra sweetness)
- 1 tbsp coconut oil
- Water, as needed, to bind
- 100g melted dark chocolate
- 50g chopped roasted hazelnuts (for coating)
Method
- In a blender, add roasted hazelnuts, cashews, and coconut oil. Blitz until the texture resembles couscous.
- Add cacao nibs, LØUCO protein powder, and dates. Blitz again until fully combined.
- Mix in hazelnut/almond butter and honey. Add a splash of water if needed to bind into a thick, sticky dough.
- Roll into bite-sized balls and transfer to the fridge for 10 minutes.
- Melt the dark chocolate, dip each ball, then roll in crushed roasted hazelnuts.
- Chill again for 20 minutes, then store in the fridge. Try not to eat them all in one go!
