Ingredients
- 2 eggs
- 2 tbsp Greek yoghurt
- 1 tsp organic vanilla paste
- 50g oat flour
- 20g LØUCO Protein Powder
- 50g blueberries (half for batter, half for topping)
Method
- Whisk the wet ingredients: In a bowl, whisk together the eggs, Greek yoghurt, and vanilla paste until smooth.
- Add the dry ingredients: Mix in oat flour and LØUCO Protein Powder until a thick pancake batter forms.
- Fold in blueberries: Gently stir in half the blueberries. Set the rest aside for topping.
- Cook the pancakes: Heat a non-stick pan over medium heat and lightly grease. Spoon in the batter to form 3 pancakes. Cook 2–3 minutes per side, until golden and fluffy.
- Top and serve: Stack your pancakes, top with the remaining blueberries, and an optional spoonful of Greek yoghurt.
