Ingredients
Base Layer
- 200g mixed nuts
- 8 Medjool dates
- Splash of lemon juice
- 40g LØUCO Protein Powder
Top Layer
- 150g cashews
- 25–50ml coconut milk
- Juice of 3 lemons
- Drizzle of honey (optional)
Method
- Prepare the base: Add the mixed nuts, dates, protein powder, and lemon juice to a food processor. Blend until the mixture sticks when pressed. Press firmly into a lined dish or tray.
- Make the creamy top layer: Blend cashews, coconut milk, lemon juice, and honey until smooth and creamy.
- Assemble: Spread the top layer over the base and smooth with a spatula.
- Chill: Freeze for at least 20 minutes until set.
- Serve: Slice into bars or squares and store in the fridge.
