Fuel your day with a clean, protein-packed twist on Pancake Day (or for an everyday breakfast treat!)

With over 80% of us enjoying pancakes today, why not make yours work for you? These Lemon & Poppy Seed Greek Yoghurt Pancakes are packed with fibre and protein thanks to LØUCO Protein Powder, leaving you full, fuelled, and satisfied.
Ingredients
- 3 tbsp Greek yoghurt
- 1 egg
- 25ml oat milk
- 25ml lemon juice
- 40g LØUCO Protein Powder
- 100g plain flour
- Zest of 1 lemon
- 2 tbsp poppy seeds
- 1 tbsp baking soda
Method
- In a mixing bowl, whisk together the Greek yoghurt, egg, oat milk, and lemon juice.
- Sift in the flour and LØUCO Protein Powder, then mix until just combined.
- Add lemon zest, poppy seeds, and baking soda. Stir to combine.
- Heat a non-stick pan and fry spoonfuls of batter until golden on both sides.
- Serve with a dollop of Greek yoghurt, fresh fruit, and a drizzle of honey.
LØUCO Tip
Add a splash more oat milk if you prefer thinner pancakes, or swap lemon zest for orange for a twist. These reheat well, make a batch for the week!
