Lemon & Poppy Seed High Protein Pancakes

With over 80% of us enjoying pancakes today, why not make yours work for you? These Lemon & Poppy Seed Greek Yoghurt Pancakes are packed with fibre and protein thanks to LØUCO Protein Powder, leaving you full, fuelled, and satisfied.

Ingredients

  • 3 tbsp Greek yoghurt
  • 1 egg
  • 25ml oat milk
  • 25ml lemon juice
  • 40g LØUCO Protein Powder
  • 100g plain flour
  • Zest of 1 lemon
  • 2 tbsp poppy seeds
  • 1 tbsp baking soda

 

Method

  1. In a mixing bowl, whisk together the Greek yoghurt, egg, oat milk, and lemon juice.
  2. Sift in the flour and LØUCO Protein Powder, then mix until just combined.
  3. Add lemon zest, poppy seeds, and baking soda. Stir to combine.
  4. Heat a non-stick pan and fry spoonfuls of batter until golden on both sides.
  5. Serve with a dollop of Greek yoghurt, fresh fruit, and a drizzle of honey.

 

LØUCO Tip

Add a splash more oat milk if you prefer thinner pancakes, or swap lemon zest for orange for a twist. These reheat well, make a batch for the week!
