Created by Andy Daly (The Sugar Doctor), Registered Nutritional Therapist, this Pumpkin Seed Protein Buddha Bowl delivers on every level: high in fibre, healthy fats, slow-release carbs, and a protein-packed dressing thanks to LØUCO Nourish.

Ingredients

Base

1 cup cooked wild rice

  • 1 cup kale (de-stalked & massaged with olive oil)
  • Roasted Veggies
  • 1 medium sweet potato, cubed
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • Salt & pepper, to taste

Protein

  • 1 cup roasted chickpeas (see method below)

Dressing

  • 2 tbsp LØUCO Nourish Protein Powder
  • 3 tbsp tahini or almond butter
  • 2 tbsp lime juice
  • 1 tbsp tamari
  • 1 tsp maple syrup
  • 1 tsp ground ginger
  • 2–4 tbsp water (to thin)
  • ½ tsp chilli flakes

Garnish

  • 1 tbsp chopped fresh coriander or parsley

 

Method

  1. Roast the Chickpeas
  2. Preheat oven to 200°C.
  3. Drain, rinse, and pat dry chickpeas.
  4. Toss with 1 tbsp olive oil, ½ tsp smoked paprika, ¼ tsp garlic powder, ¼ tsp ground cumin, salt & pepper.
  5. Roast for 20–25 minutes, shaking halfway, until crisp and golden. Cool slightly before serving.
  6. Roast the Veggies
  7. Toss sweet potato, broccoli, and cauliflower in olive oil, paprika, salt, and pepper.
  8. Spread on a tray and roast at 200°C for 20–25 minutes until caramelised and tender.

Make the Dressing

  1. In a bowl, whisk LØUCO Protein Powder, tahini, lime juice, tamari, maple syrup, ginger, chilli flakes.
  2. Add water slowly until smooth and pourable.
  3. Assemble Your Bowl
  4. Divide rice and kale between two bowls.
  5. Top with roasted veg and chickpeas in neat sections.
  6. Drizzle generously with the protein dressing.
  7. Finish with fresh herbs.
