Ingredients
- 150g oats
- 300g mixed seeds & nuts (e.g. pumpkin, sunflower, sesame, poppy)
- 1 tbsp ground flaxseed
- 40g LØUCO Protein Powder
- 300g cottage cheese
- 2 large eggs
- Extra virgin olive oil (if needed to bind)
- 1 tsp salt
- 2 tsp baking powder
Method
- Preheat your oven to 180°C and line a loaf tin with greaseproof paper.
- In a large bowl, mix oats, seed mix, ground flaxseed, baking powder, salt, and LØUCO Protein Powder.
- Add in the cottage cheese and eggs, mixing until a thick dough forms. Add olive oil if the mixture feels dry.
- Transfer the mixture into your lined loaf tin and smooth the top.
- Bake for 1 hour, or until golden and firm to touch.
- Allow to cool before slicing. Store in the fridge for up to 5 days, or freeze slices for later.
