Ingredients
For the Salmon
- 4 organic or wild salmon fillets
- ¼ cup LØUCO Nourish Protein Powder
- 2 tbsp almond flour
- 1 tbsp ground flaxseeds
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp sea salt
- ¼ tsp black pepper
- 1 tbsp fresh dill, finely chopped
- 1 large egg
- 1 tbsp Dijon mustard
- 1 tbsp lemon zest
- 2 tbsp olive oil
Method
- Preheat oven to 200°C. Line a baking sheet with parchment and brush lightly with 1 tbsp olive oil.
- In a shallow bowl, combine LØUCO Protein Powder, almond flour, flaxseeds, paprika, garlic powder, salt, pepper, dill, and lemon zest.
- In a separate bowl, whisk the egg and Dijon mustard until smooth.
- Pat salmon fillets dry. Brush each with the mustard-egg mixture.
- Press each fillet into the crust mix, coating the top and sides.
- Lay salmon crust-side up on the tray, drizzle with remaining olive oil.
- Bake for 12–15 minutes or until the crust is golden and the fish flakes easily with a fork.
- Garnish with a squeeze of lemon and extra dill. Serve with greens or roast veg.
